Recipe rundown

Ingredients:
  • 18 eggs
  • 1/2 cup milk
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 red pepper, chopped into small pieces
  • 1/2 green pepper, cut into small pieces
  • 1 small zucchini, shredded
  • 1/2 white onion, chopped into small pieces
  • Salt
  • Black pepper
  • Garlic powder
  • 1 1/2 cup fresh spinach, chopped
  • 3 cups mozzarella cheese, shredded
  • 2 stalks green onions, chopped
  • 1 tablespoon olive oil

  • Ready in about 1 hour

Directions

  1. Preheat your oven to 350°F.
  2. In a large skillet, heat the olive oil. Saute the red pepper, green pepper, zucchini, and onion. Season with some salt, black pepper, and garlic powder. Saute the veggies until they become tender. Then, add the spinach and cook until it becomes wilted. Remove from the heat and set it aside.
  3. In a large bowl, beat the eggs using a whisk. Add the salt, black pepper, and Italian seasoning.
  4. Pour the beaten eggs into a 9×13 inch baking dish or a large cocotte. Add the sauteed veggies and stir until the vegetables and eggs are evenly combined. Top the egg and veggie mixture with the shredded mozzarella and green onions.
  5. Bake the casserole for 35 to 40 minutes or until the eggs are fully cooked and golden along the edges.
